Chocolate Bean Balls. Those are three words that I never thought I’d use in a sentence, never mind in a recipe. I think this must have been the delicious dish that caused all the fuss in that Saturday Night Live skit. You know the one – with Alec Baldwin (a.k.a Pete Schweddy) and his irresistible…..spheres. If you could make it past the innuendo and the double entendres, you remember that the ladies really were quite taken with the delicious, though rather unfortunately shaped, treats. The skit ran out of time before they were able to discuss the real merits of the delightful little orbs, which is a pity, because I think these are just about as perfect as it gets for a hiking snack.
When you get a batch of Mom’s cookies, that’s when you know you’re really going somewhere. I don’t mean that you have finally worked your way to the top. I mean that your bags are packed and you’re headed out the door. She used to make these for my Dad when they were dating. Friday night he’d drive down from grad school in New Hampshire to see her, and Sunday night she’d send him back with a batch of cookies. The intent was for the cookies to last the week, but they never made it past the Massachusetts state line.
This was one of the first baking recipes that I ‘veganized’ after becoming plant based. The original recipe is from Cynthia Nims’ The Best Places Northwest Desserts Cookbook. Everyone that has tasted them has asked for the recipe. I mean everyone. I brought them in to work once, and someone who missed out on tasting them even asked for the recipe.
